How I Got Out Of A Cooking Rut

Lately, I’ve been in a bit of a cooking rut.  I know, it’s not my typical topic to share about.  However, if you are at all like me, I have so much going on that I never plan dinner.  I buy the same things at the grocery store each week then I get home at 5:30 or so and need to have dinner on the table by 6.  Therefore, having the same meal over and over makes it brainless, easy and just boring.  There is something about spring that makes me revaluate everything including what’s for dinner.  I spent a little time a few weeks ago and found some amazing dishes I thought I’d share with you.

First of all, in my house we eat healthy.  Typically we eat lean meats and veggies and a little rice or quinoa for the family.  I was so thrilled to find SkinnyTaste.com as Gina’s recipes are exactly my taste and my timing.  Meaning that everything is quick to make and tastes delicious.  Here are a few of my favorite new meals to get out of my cooking rut that I found on SkinnyTaste.com with a link on how to make it!  I made all three of these recipes last week and they were delicious and a big hit in the Blair house!  Stella even tried Pork for the first time and loved it.

Fish Fillet with Tomatoes, White Wine and Capers

How I Got Out of a Cooking Rut

Ingredients:

  • 2 tsp whipped butter (or 1 1/2 tsp unsalted butter)
  • 2 cloves crushed garlic
  • 1/4 cup white wine (whatever you drink)
  • 1/2 lemon, juice of
  • 1/2 cup marinara sauce (homemade or store bought)
  • 2 (6 ox each) fish filets, skin removed such as Fluke, Flounder, Halibut, etc
  • 2 tsp capers
  • pinch kosher salt
  • fresh black pepper to taste

Ingredients:

  • 19 oz. pork tenderloin
  • 1 tsp kosher salt
  • black pepper, to taste
  • 1 tsp olive oil
  • 5 cloves garlic, smashed with the side of a knife
  • 1 (28 oz can) crushed tomatoes
  • 1 small jar roasted red peppers, drained (7 oz jar)
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp chopped fresh parsley, divided

How I Got Out Of A Cooking Rut

Ingredients:

  • 1 cup fresh basil leaves, chopped
  • 1 clove garlic
  • 1/4 cup grated Parmigiano Reggiano
  • kosher salt and fresh pepper to taste
  • 3 tbsp olive oil
  • 1-1/4 lbs skinless chicken breast, cut into 1 inch cubes
  • 24 cherry tomatoes
  • 16 wooden skewers
